Soup: 8 hour French onion soup, aged gruyere, herbed croutons
Raw Bar: albacore tuna sashimi, fresh wasabi, pickeled colored carrot salad

Braise: Kamouraska lamb shank, orzo, squash, pearl onion, black trumpet mushroom
